Manual trimming of fillets is a very labour-intensive process and the result depends on the operators at the trimming table. Yield and accuracy can vary significantly from operator to operator and from day to day.
The BAADER 988 Trimming Machine automates the trimming process almost completely, thus reducing the need for manual labour for this process to a minimum. It consistently provides a high level of cutting quality according to the pre-set demands.
The BAADER 988 is an automatic trimming machine suitable for a range of salmonids. It drastically reduces the need for manual trimming and results in a consistently high level of trimming quality. It incorporates an advanced yield-saving process whereby each fillet is evaluated by size, volume, colour grade and trim category.
The BAADER 988 then calculates the optimal cutting pattern based on the evaluated parameters.
As each fillet is evaluated, the specific grading information/signal can be used for subsequent sorting into different processes – fillets of a specific color or size for example. In addition, each fillet can be trimmed or not, depending upon this grading information.
The BAADER 988 enables processors to ‘design’ specific trims compiled from the belly, back and the surface of the fillets.
The BAADER 988 maximizes production value, yield, throughput and quality.

The flexibility of the machine offers the possibility to choose the most profitable trim by using so called super recipes.
