Amid the world’s population expected to reach ten billion by 2050, the need for a more efficient use of our resources is becoming ever more apparent. The BAADERING technology paves the way for the food industry into a more sustainable future.
BAADER announces the launch of its latest machine supporting the BAADERING process, the brand-new BAADER 608. The most powerful and largest member of the BAADERING technology machine family takes this technology to the next level. Thanks to its improved design, this machine is the most innovative and hygienic of its kind. It sets new standards for food quality, value creation and process reliability, as well as for user-friendliness.
The new BAADER 608 is available for sales from the 22nd of April 2021 via the local BAADER representatives.
BAADERING is an internationally recognized process of separating soft and solid components, elevating the value of the product at the same time. This technology helps produce the highest quality ground meat free of bone, cartilage and sinews, ensuring the highest possible yield. The latest addition to the BAADERING machine family is the ideal choice for everyone seeking to get more out of their raw materials. Due to its larger capacity and the improved design, the BAADER 608 reaches new performance levels. Its new design increases resource efficiency, thus ensuring the highest yield and best quality outcome. It also significantly reduces downtime thanks to the new front plate, which can be opened without tools. It provides quick access when needed, so production can be resumed without unnecessary delays.
The BAADER 608 raises the benchmark for food safety and hygiene. The surface on the inside of the new front plate, is smooth, making it easier to keep clean.
An entirely new design principle made it possible to dispense with support rollers, which in turn improves hygiene. There are no duplications and no screw connections. The pressure roller can be lowered even further for better handling, cleaning and adjustment options.
All axes and bolts are now rounded, eliminating a potential source of germs. The tension rollers for the support chain are now covered and thus easier to keep sterile and clean, thanks to its smooth surface. Draining slant son and in the housing ensure water drains from anywhere. There are no screw connections where dirt and residual water could collect. The machine recirculates excess lubricating grease, so it cannot drip through lubricating holes. These adaptations make the BAADER 608 the most hygienic food processing machine of its kind.
The BAADER 608 provides maximum yield while ensuring the highest product quality. Its innovative discharge belt increases process reliability since it is significantly less susceptible to operational faults and ensures residual materials are continuously discharged. The control panel with its touch screen is very easy to use. Various parameters, such as pressure or distance between single products, can be set for different products and retrieved at any time. This ensures that quality and yield remain consistent, and results are reproducible. Changing these settings is also very easy.
The squeezing belt and support chain tension automatically adjust to varying product sizes, so there is no need for manual settings after changing the perforated drum, thereby increasing process reliability. A new kind of product scraper conveys the product from the machine with maximum care. This minimizes the contact between the product and the machine, and thus ensures the product retains its structure. A discharge belt for residues instead of a slide as in older versions, operates without interruptions.
The BAADER 608 also sets new standards with regard to user-friendliness, thereby increasing workers’ welfare. The new hydraulic perforated drum tension is more ergonomic to handle. Quick and easy access to the interior facilitates assembly and maintenance of the machine. The new control panel is easy to handle with no manual settings required. The BAADER 608 is ready for the future and comes with an interface for further data processing.
BAADERING is an internationally recognized press-separation process developed by BAADER. In principle, a squeezing belt feeds the material onto a perforated drum and pushes the soft components through the holes. The solid components, such as tendons, connective tissue, cartilage, bone shards, foreign bodies, etc., remain outside the drum and are discharged. The end result is consistent and safe product quality and allows for the utilization of previously untapped or discarded resources.
The BAADERING process provides reproducible results, thus enabling the standardization of raw materials. It ensures maximum yield and a high process reliability. On top of that, this technology paves the way for the automation of the food industry, a crucial aspect in light of increasing cost pressures and a shortage of workers. BAADERING delivers the highest product quality through gentle processing of the raw materials, be it fish, poultry or red meat.
Its flexible use even extends to other raw materials such as fruit and vegetable, products for depacking and many more. The end result is a structured product of high quality gained from previously discharged resources. This technology does not only add value, it also improves sustainability by increasing resource efficiency.
There are many ways of adding value to products by BAADERING. This technology can turn waste and disposal costs into profit through recovery. Unattractively shaped sausages for example, can be separated from their casing in such a way that the valuable raw material is preserved. After reprocessing, products can then be sold to the trade. Moreover, the BAADERING process can be applied to gain components for meat production. The machine is able to peel ingredients for meat production, such as fresh onions or garlic, in an optimal consistency.
As for poultry, chicken liver is a good example: BAADERING easily and thoroughly separates the bile ducts from the liver. Offal such as liver can be processed into a product ready to be turned into liver pâté.
Fish can also be baadered in many ways that can add value to otherwise unused raw materials like salmon skin. There are lots of possibilities to make use of it in medical products, for pet food or as a dried snack for human consumption.
