What do consumers expect from a fillet? A great appearance, obviously. The fillet needs to look delicious, healthy and fresh to attract customers. But most importantly, a fillet is expected to be boneless; no ifs or buts. The consumer wants to enjoy their delicacy free from fishbones.
BAADER has come up with several finishing solutions that enhance the value of products made from fillets. The BAADER 867 Pin Bone Remover removes the vast majority of bones without breaking them.
This pin bone remover has a better grip than others due to the patented double grip rollers. A better grip means better yield as there is no need for aggressive machine settings.
The BAADER 867 has the best performance for post-rigor fish from 3–4 days after harvest.
The surface of the fillets has less damage combined with a reduction in weight loss.
